Veggie Chili, Meatless Mondays, Decor it Yourself

I go meatless often.  The idea from this video is not to make vegetarians of us, but cut down on MEAT, a good idea all around.

If you are a committed vegetarian, you can make your own substitutions.

Most cheese is made with animal rennet.... So, also not veggie friendly. Also, learn about milk production, it also adds to meat production. :-/

and you can add tofu with your chilli if you want!

Worcestershire sauce has anchovies in it, so if you are a true vegetarian and dont eat fish, make sure you use vegetarian worcester sauce, not the lea and perrins brand as shown in this recipe

Don't worry - It was my choice and I'm proud to be a health nut. Did you know that marshmallows and jelly have elatine in them, gelatine is horse and animal hooves, pig skin and the protein from animal bones. This had some really cool recipes that I'm dying to try out! Thanks so much, and If i wasnt already a vego,id so do this!

I think meatless mondays are great! And I also think Andrew Bird's Mysterious Production of Eggs album thingy in the background is great :)

Thanks for the chili inspiration but I do have to mention that worcestershire sauce almost always isn't veg, with only one exception that I know of: http://store.foodfightgrocery.com/vewosa.html.
Also vegetarian is good but vegan is great!

I made this tonight!  It was delicious.  With just a few changes made because I didn't have some ingredients exactly as the video shows.

Used 4 fresh diced roma tomatoes in place of the canned and added some tomato paste because I didn't get the juices that would have come with the canned variety.
Also didn't have worcestershire sauce so I added other spices to give more flavor.  Some chili powder, a little brown sugar, and yellow mustard.

It was delicious and I look forward to having leftovers for a day or two!

worcestershire sauce is not vegetarian, and a vegetarians do not eat fish, that is just someone who doesn't eat red meat and chicken
and to answer someones question abou how to find a substitue, if you go to wholefoods you can find vegan worcestshire sauce, which tastes almost identical

Worcestershire isnt vegetarian... unless you are a vegetarian that eats fish... which wouldn't make you a vegetarian...

wow!  i MUST try this chili, but as caitlyn said, woshestershire sauce has anchovies, so i'll omit it....my bean burger recipe: 
2 cans beans (i used a can of black beans and a can of kidney beans, but it probably does not matter that much)
1 T + 1 t. Chili Powder
1 t. Garlic Powder
1/2 t. salt (approx.)
a couple shakes of pepper
2 T. Ketchup
1 onion
1 egg
plain bread crumbs
Oil

Drain beans an mash in a bowl (the squishier the better!).  Add the chili powder, garlic powder, salt, pepper, and ketchup.  Mix well until all ingredients are blended.  Mince or chop the onion and mix this into the bean mixture as well as the egg.  Add bread crumbs (slowly) until it makes a hamburger consistency (I am not sure how much I added).  Put enough oil in the bottom of a pan, a little more than just covering the bottom of the pan.  Cook until brown on both sides.

*Warning....it's very garlicy, but oh so good!

That worcestershire sauce has anchovies in it! It's not even vegetarian! I have been accidently been fed that stuff, and it really made me feel bad. You can buy vegetarian wochestershire sauce, but that brand has anchovies in it.

I made the "secret" chili recipe on friday and have been eating leftovers ever since.  I think I went a little to crazy with the salt.. but everyone here loves it.

Holy Smokes!  Just when I was searching online for something to make I find this!  I'm going to make it today. We eat meat but my hubby's cholesterol is very high and we are trying to eat less red meat. (I am at least ...he's another issue ! )

I made the veggie chili last night and it was GREAT!  I subbed the kidney beans with black eyed peas.  awesome.  i also added hot sauce and it was a nice kick.  I'm not a vegetarian but I WILL make this again :)

just so nobody gets the wrong idea, there is no scientific proof that hormones affect you in any way. they are broken down in your stomach by its acids...jus sayin

Love this episode Meg-- Way to go with raising awareness of what people can do to help themselves and the planet (eating veggie reduces your contribution of greenhouse gases to our env.). I like adding something like Morningstar veggie crumbles (made of soy mostly & has consistency of ground beef) to veggie chili. Also great substitute to use to make veggie tacos (still use taco seasoning and all your favorite taco toppings). Meat eating husband and I made them this week and he loved them. Another easy veggie meal that meat eaters tend to like: get a pizza dough (trader joe's has plain, wheat, and herb-- very yummy!), and add your favorite toppings and voila ;)!

Lovely! I'm an omnivore but I love vegetarian food, too (and I have quite a few veg friends). My veg chili has celery, carrots, zucchini, onion, garlic, beans galore, a can of diced tomatoes and red wine. We usually season with chili powder, cumin, sea salt (sometimes the smoked kind), pepper and thyme and add a squeeze of lime juice. Yum! I really recommend trying the zucchini if you're into that!

Meg, I love all of your cooking and eating wares! Thanks so much for the recipe! My husband and I eat kosher and mostly vegetarian and adding new recipes always helps out! If we do buy meat we buy from local farmers which is way cheaper than getting good meat in the store (we get farm fresh eggs for id="comment_list".25 a dozen) and we know the meat is killed and prepared kosher which is way cleaner.

I love you more and more with every episode Meg!! That chilli looks so good, and this whole epsiode is so great. I've been vegetarian for a year and a half now, and I saw food inc. a week ago and it was horrifying. I just know that if more people knew where thier meat was coming from then they would be much more likely to be smarter shoppers or give up meat altogether. Meatless mondays is also a great idea because it shows people how EASY it is to stay away from the stuff... most people think they could never become vegetarian either because it would be too hard to stay away from meat and also too difficult to find meals. Both untrue!! I love that our supermarkets and restaurants seem to be catering towards vegetarian/vegan meals nowadays, and there are so many great meat analogs that no one should feel meat cravings. this is a really helpful episode. i love the idea of meatless mondays.  i tend to stray away from meat anyways, but i can try to convince my family to do it :)

great idea. the food we eat here in France is bad but the food you guys eat in the good old USA is gross. have a look at were your meat really comes from its truly horrible. If I was from the USA I would never eat meat.

I eat a lot more vegetarian dishes now, not because I am vegetarian, but because it's a great way to increase the amount of veggies/ day.  Great episode, the chili looks great!

I'm a vegetarian living with 4 non-veg roommates, so I end up making up a lot of vegetarian versions of whatever they're making. One night we decided to have a dinner party to get rid of some potatoes and ground beef that needed to get used. The obvious solution to a British (and 2 American) ensemble? Shepard's Pie. I of course had to make my own version and I think it came out pretty well!

Vegetarian Shepard's Pie

1/2 large onion, chopped
1 green pepper, chopped
9 small mushrooms, chopped
1 clove garlic, chopped
1 package red split pea lentils
1 can chopped tomatoes 
3 large potatoes
1 sweet potato
1/2 cup of milk
1/2 stick of butter
2 pinches fresh rosemary
1 tablespoon herbs de provence
1 teaspoon cayenne pepper
1/2 cup grated cheddar cheese
salt and pepper
vegetable oil
3/4 glass of white wine

1. Set oven to 350 degrees. Put lentils in boiling water and follow directions on package. Chop potatoes and sweet potato into chunks and set in boiling water.

2. Meanwhile, heat vegetable oil in a sauce pan and saute onions and garlic. Once the onions are soft add peppers and mushrooms. As the vegetables cook add the herbs de provence, rosemary, cayenne, salt and pepper. Add the lentils, chopped tomatoes and wine. Cook for another 2-3 minutes and then take off the heat.

3. Drain water from the potatoes. Add milk and butter. Mash potatoes until creamy.

4. Place vegetables in a casserole dish. Spread mashed potatoes over vegetables. Sprinkle cheddar cheese over the top.

5. Place in oven. Bake until the top begins to brown slightly (about 10 minutes).

Serves 4-5 people.

I'm confused. My father has a dairy farm and he can't sell milk if the cow is on antibiotics. Do industry farm just not care about the law?

one word  Lentil's !!!  they cook up quick from the dry state and they have a meaty texture and flavor.  Trader Joe's has them ready to go in the fridge section!   Soup, stew, burgers, and loaf's  or is it loaves?  My favorite, saute cooked lentils with "chunks of Garlic and olive on with crusty italian bread  a little saltandpep  mmmmmm!!!!

Great episode Meg! I just made this veggie sandwich and it's so good I want to share it with you. (goat cheese and pears is a match made in heaven!)

-Slice half a baguette (or panini bread) lengthwise and spread some goat cheese on it. Put it under a grill, cheese side up, so it melts.

-Meanwhile, sauté some mushrooms and tofu slices in a skillet with a bit of oil. When the mushrooms are nearly cooked, add about 2-3 tbsp of mirin (or vermouth, or sweet wine) and a dash of soy sauce. Stir and let the liquid boil off.

-Assemble your sandwich with the bread and goat cheese, mushrooms, tofu slices and fresh ripe pear slices. Yum! Zucchini slices are also a nice addition (and so is mayo).

awesome soup! i make something similar, but add loads of ground pepper & barley. makes it yummier. try! ;+)

My husband and I only eat meat once a week and the way we have made this work is to have great vegetarian cookbooks... My favorites are The Greens Cookbook by Deborah Madison, Farmer John's Cookbook: The Real Dirt on Vegetables by Farmer John Peterson, and any of the moosewood cookbooks

I also love the framed records on your wall in the kitchen. Very cool.

hi there! i don't want to get into semantics - but i don't think worchestershire sauce is technically veg since it is made with anchovies. BUT! some vegetarians do eat fish, and for those who don't, there are some vegan worchestershire options, though i'm sure they cost a little more. just thought i'd put it out there... either way, LOVE your show and i really like how you did a slightly different take on being earth friendly at home ('cause we all know about CFLs and lowering the thermostat...) and thanks for the delish recipe!

I LOVE Trader Joe's!  I stock up on their macaroni (among other things) every time I visit my parents.  It has REAL cheddar cheese in the powdered sauce mix and it makes all the difference.
